Discussing the undead creatures, there are 2 different types. 1 has a spirit form, like ghosts, wraiths. The other has a physical body thats being controlled by some evil entity. Ghasts are like ghouls on steroids, perhaps their bodies were once giant form. So since flesh is involved, cold can harm their bodies, by freezing the flesh. But since no vital organs or blood can be harmed by the cold, that is why you have to cast so many blizzards to destroy them.

I agree that the Great Drakes should be tougher than they are.
