I've been searching thoroughly through the forums, and I haven't found much currently useful information on Monks, seeing as the guild and gear have been changed.

My understanding is that they're fighters with high dodge and access to mind spells? This sounds like something I'd really want to play, but I'm not quite sure if it'll work as well as I want, because I don't know if there's a lot of monks specced for the most recent updates.

What has changed about them? Did I miss it?

And I don't understand what you are asking? Are you asking for a build because you don't want to think up of one? Or wha....?

The monk guid did not change. But, many of the old net monk build use spam healing. With the healing nerf you cannot use the spam healing builds anymore.

I would like to see monk builds with healing by skill, by full healing spell, by manashielding and by 1/2 manashield + full heal spell. Anybody running monks with these healing methods care comment on how well they work?

Well I tried a naga spam healing build, worked out pretty well, although after the nerf, I have found unguilding helps a lot more, being able to cast your own resists help a lot more than the 10 unarmed, it does take longer to kill, but you don't die as fast (i'm usually more worried about dieing fast)
